EASY VEGGIE SKEWERS

As you may have noticed, I have a thing for skewers these days. They are the easiest way to transform your veggies - or fruits - into yummy snacks for any occasion! Plus, they look so beautiful and colorful. Click read more for easy ideas and preparation tips.
Options are endless, and it takes only a couple of minutes to put them together. My go to are cherry and grape tomatoes. They come in different colors and easily pair with cheese and other vegetables. Another great addition are those tiny mozzarella cheese balls. If you see them at the supermarket, get them! I'm sure you will find a way to use them.
Caprese skewers are my absolute favorite classic, specially with some fig balsamic vinegar on top (mmm!). I made this in 5 minutes or less. They look great and taste better!
If you are feeling more adventurous, you can roast your veggies before making the skewers. Broccoli, butternut squash and grape tomatoes make a great combo; and can be paired with some spicy peanut sauce for extra deliciousness.
Top them with olive oil, salt and pepper. Then, roast them in the oven (400F) for 20-30 minutes. They will shrink a little bit, which will make the skewer's preparation easier.
